Pasta with Peppers & Sun-Dried Tomatoes

  sweet bell peppers, julienned
1
  Anaheim chili, julienned
1
  onion, sliced
3
  sun-dried tomatoes, julienned
2
cloves garlic, minced
3
T Balsamic vinegar
    olive oil
1/4
cup extra-virgin olive oil
    fettucine, cooked
    Parmesan cheese-freshly grated

Saute onions in olive oil. Add peppers and continue to saute.

Add tomatoes and garlic, saute briefly. Add vinegar and cook until the vinegar is almost gone. Take off the heat and add the extra-virgin olive oil and salt and pepper to taste.

Serve over fettucini. Garnish with Parmesan cheese.
